Our Steaks Explained
Where do we get out Beef from?
We source our meats from the UK. We use a premium brand ‘Blackgate’ which has won some of the top awards for the last 7 years.
What types of beef do we stock?
Here is a small informative picture of our steaks and where about they come from.
Why do we age the steaks?
We use 2 different ages for our steaks.
28 day aged for all of our cuts. Our flat iron, sirloin, ribeye and 8oz fillet are all wet aged for 28 days before they are portioned for your plate
We also offer a 35 Day aged fillet which has been hung and dried for 35 days.
This process adds to the tenderness of the steak and aims to reduce any fat elements that the steak may hold. The surface on the steaks during the aging process help preserve the steak and almost make it more ‘beefy’
Occasionally we get a dry aged ribeye which helps us deliver a the same flavour but with less fat to break down
What do we cook on?
Using a gas grill with lava rocks / briquettes. This helps give the flame grilled taste without the unreliability of temperature of coal or other fuels
